We are always told: We are what we eat! I remember when I
was younger my parents always tried to make me eat vegetables….gross! I mean
what kid likes to eat vegetables. The only way I would eat vegetables would be
in soups my mom would prepare! I think I was about eight the first time I ate
the soup. The soup consisted of three different style beans and an bunch of vegetables. This style of soup is very heart healthy while tasting
great!
February is Heart Healthy month, so why not enjoy it with a
great soup! Eating heart healthy meals is very important in my family. After my
grandfather pasted away from having a heart attack, I have become more aware of
what foods I put in my diet. The foods
we consume can greatly impact the health of our heart. I have created a delicious
three bean soup that I would often enjoy when I was younger.
Quick Tip: I have
noticed soups turn out the best if you can cook it in a Dutch Oven! Try it out!
1 Medium Onion, chopped
1 Tablespoon Olive Oil
4 Medium Carrots
3 Cups of Fresh Spinach (chopped)
3 Cups of Vegetable Broth
3 Cups of Water
2 Tablespoons of basil
1 Teaspoon dried oregano
2 Garlic Cloves, chopped
1 Can of Northern Beans (rinsed & drained)
1 Can of Garbanzo Beans (rinsed & drained)
1 Can of Red Beans
-In Dutch Oven, sauté onions and garlic in oil.
Then add the rest of the ingredients, and simmer, until vegetables are tender.
**Add Salt & Pepper to Taste
Enjoy!!

I can relate to this post on many sides. My parents always tried to get me to eat my veggies. I didn't realize how important they were to be honest. It is crazy how much better I feel when I do eat them. I have learned to love them now! Great post!
